Spaghetti with meat sauce

I’m not a fan of spaghetti sauce.  I never have been.  I would rather have noodles with butter and garlic.  I do however love to dip my bread in sauce, and my husband and kid LOVE spaghetti.  So I set out to find a good sauce recipe to just make it from scratch.  This recipe makes about 3 quart bags that go in the freezer quite well and take about a day or so to thaw out.

Ingredients:

  • 2 29oz cans tomato sauce
  • 2 6oz cans tomato paste
  • 1 large onion
  • 2-8 gloves of garlic (depending on personal preference)
  • 2 lbs ground beef or turkey
  • 1 tbsp sugar
  • 1/2 can water (use empty tomato sauce can)
  • oregano to taste
  • salt and pepper to taste

Instructions:

  1. Put garlic gloves (approx 2-8, depending on preference) and onion into a food processor and pulverize.
  2. Salt pan and cook meat, spoon off any grease.
  3. When meat is thoroughly cooked, stir in onion and garlic. Cook for about 3-4 more minutes, stirring constantly.
  4. Pour tomato sauce and paste into a large pot.
  5. Add 1/2 can of water to tomato mix.
  6. Add meat mixture to tomato sauce, stir well.
  7. Sprinkle oregano on top of sauce, enough to coat the top. Stir, then repeat.
  8. Add salt and pepper to sauce, stir.
  9. Add sugar, stir.
  10. Simmer on low for 90 minutes, stirring occasionally.
  11. Serve over your favorite pasta.


Chili Con Carne

A couple of months ago I went to San Antonio for work. While there I had the best mexican food I’d ever had.  Chili Con Carne over cheese enchiladas!
Chili Con Carne – 
Ingredients:
  • 3 pounds lean ground beef
  • 2 medium white onions, coarsely chopped
  • 8 medium garlic cloves, finely chopped
  • 1/4 cup ground ancho chile powder
  • 2 teaspoons ground cumin powder
  • 1 (14 1/2-ounce) can puréed tomatoes
  • 1 (14 1/2-ounce) can diced tomatoes, with their juices
  • 2 chipotles en adobo, finely chopped
  • 2 tablespoons plus 1 teaspoon kosher salt

Directions: 

  1. Heat a Dutch oven or large, heavy-bottomed pot with a tightfitting lid over medium-high heat for 2 to 3 minutes. Add the meat, onions, garlic, ancho chile powder, and cumin powder and stir to combine and break the meat into small pieces. Cook, stirring occasionally, until the meat is well browned with no pink remaining, about 10 minutes.
  2. Stir in the tomatoes with juices, chipotles, and salt and reduce the heat to medium. Let simmer, stirring occasionally, until warmed through, about 10 minutes. Season with freshly ground black pepper and more salt as needed.

Pour this over your favorite burrito or enchiladas or just eat as is! Soooo yummy!

25 week OB update

So I saw my awesome OB today for the normal visit.  I hadn’t actually seen him since my 13 week visit because of his schedule being so booked!  He was surprised to see how big I’ve gotten.  Thanks doc? 😀

Everything looks great with baby girl!  She’s a mover and a shaker and was moving under the doppler and kept kicking it.  It was super cute!

He said I’m measuring about 3-4 weeks “big” so he anticipates another big baby!  Oh great.. Morgan was already big enough! 🙂 

I really don’t care if she’s big or not, I just want her to cook all the way and be healthy 🙂 

I go back in 3 weeks for the lovely glucose test and then every 2 weeks after that for a while.  I hate all of these “late” visits.. They’re just obnoxious! Oh well, what is important again, is that baby is healthy! 

25 weeks!

I haven’t really been using this blog like I should.. to talk about my pregnancy so I don’t forget any of it.  I was really good at updating my blog when I was pregnant with Morgan, now, not so much.  I’ll try to get better!

Lately I just feel like a big blob, but everyone says I look great, so that’s a good thing right?  

25 week pregnancy stuff:

How far along? 25w
How big is baby? Approximately the size of a Rutabega? 13.5 inches and 1/2 a pound
Weight gain? About 5lbs
Maternity clothes? Yes, at least when I leave the house.. Some non-maternity sweaters still fit OK though.
Stretchmarks? Nothing new yet.. 
Sleep? Eh.. some days are better than others.  I’m not to the “get up and pee all night long” stage yet thank goodness.
Breastfeeding? Not yet?
Best moment this week? Putting the doppler on to check in on things and having baby girl kick it!
Movement? Oh yes, she’s a mover and a shaker just like her big sister!
Food cravings? Not really.. Although I could live on mac & cheese.
Gender? Another girl 🙂 
Labor signs? A lot of Braxton Hicks.. a lot.
Belly button in or out? In still.. I did have to switch out my belly button ring for a plastic “maternity” one.
Rings on or off? Off, only because if I get hot at all, my hands swell up.. not all of the time, just enough to be annoying.
Morning sickness? Not since 13 weeks thank goodness.
What I miss: Wine & Advil
What I am looking forward to? Chicks weekend at the end of April 😀
Weekly Wisdom? Maternity clothes/bathing suits really make a difference between looking fat and pregnant 😀
Milestones: Just a lot of movement, and we can see her moving and kicking quite a bit now!
