I made a vegetarian stuffed acorn squash for dinner the other night..
Quite easy really..
Cut the tops off of an acorn squash and bake at 375 for 45 minutes
Cook up meatless “meat” of your choice. I’ve had Gimmie Lean and “field roast grain meat” .. Both were quite tasty. Gimmie Lean is soy based, Field Roast Grain Meat is vegan.
Add chopped nuts (I used Walnuts, my cousin who gave me this recipe used pecans, both are tasty) and craisins to the cooking “meat”
Once the squash is cooked, take it out and cut each one in half, stuffing each half with the “meat”/nut/craisin mixture. Enjoy!
